Chia has an extremely high-water absorption rate; once soaked, it can absorb up to 9 times its weight in water and form a thick gel. Consuming dry chia seeds is not recommended because it may cause constipation if you do not drink enough fluid.
Add 1 to 2 tablespoons chia seeds to 220ml of liquid, stir well and let it sit for 5 30 minutes or longer, depending on the liquid. Chia seeds usually take about 5 10 minutes to be well soaked in water and a longer time if soak in juices or milk.
Alternatively, pre-soak chia seeds and keep the chia gel in the refrigerator for up to 7 days for convenience. Add chia gel to any beverages, smoothies, yogurt, ice cream, salads, enzyme drinks, red or green bean soups or sauces.
To make chia gel, soak 1 part chia seeds to 9-part water, stir well. Add more water if the chia seeds are not gel like.
