Mentsuyu is a shoyu (soy sauce) base sauce for soba and udon noodles. Yamaki Mentsuyu is specially made from freshly shaved katsuobushi (bonito flakes) and an aged base sauce which produces a refined umami and matured taste. Several different katsuobushi are blended for adding more layers of flavors. It is a concentrated sauce and should be diluted when used.
