PREPARATION
- 1. Defrost 450g of nile perch pre-cuts and place on a plate, season with some salt.
- 2. Combine 1 cup of all purpose flour, 2 tsp paprika, 2 tsp salt, 2 tsp ground pepper and stir in 1 beaten egg
- 3. Gradually add in 330ml of water until a thin batter is formed
- 4. Heat oil in a deep fryer to 365°C, dip fish into the batter and drop one at a time into the hot oil
- 5. Fry fish 2-3mins till both sides are golden brown
- 6. Drain on paper and serve warm with fries
