Creamed honey is a type of honey that has been processed to control crystallization. It contains a high concentration of small crystals, which prevent the formation of larger, grittier crystals that can occur in unprocessed honey. This process results in a smooth, spreadable consistency. Since glucose is the component that crystallizes in honey, and glucose crystals are naturally pure white, creamed honey is always lighter in color compared to liquid honey of the same floral variety.
