Stir-Fry Salt and Pepper Pork

Ingredients

450g Boneless Pork Chops

MARINADE
2 tbsp Vegetable Oil
1 tbsp Shaoxing Wine
1 tbsp Corn Starch
½ tsp Salt

PEPPER SALT MIXTURE
¼ tsp Salt
½ tsp White Pepper

COOKING
¼ cup Corn Starch
½ cup Vegetable Oil
3 cloves Sliced Garlic
1pc Thinly Sliced Jalapeno

Method
  1. Cut pork into pieces. Mix in oil, Shaoxing wine, 1 tablespoon corn starch, and salt and mix evenly until all pieces of pork is well coated. Let it rest for 15 minutes.
  2. Prepare salt and pepper mixture in another bowl and put aside for later use.
  3. Prepare a medium-sized pan and pour in sufficient oil to cover half of the pork. Turn to medium heat and prepare a plate with kitchen towel to drain excess oil.
  4. Add garlic and peppers into the pan and fry until garlic turns slightly golden and peppers are crisp on the edges, around 1 to 2 minutes. Take out the garlic and peppers and drain out excess oil and transfer them onto the plate lined with kitchen towel. Transfer the garlic and peppers to a large bowl once they are cooled down.
  5. Add ¼ cup of corn starch to the marinated pork and coat them evenly.
