Ingredients
500g Mince Beef
1 tbsp Olive Oil
1pc Onion (Finely Chopped)
300g Canned Kidney Beans
1 tsp Mexican Chilli Powder
35g Taco Seasoning Mix
2 tbsp Tomato Paste
½ cup Chopped Coriander Leaves
230g Corn Chips
1 cup Grated Cheddar Cheese
½ cup Tomato Salsa
Diced Avocado – To Serve
Sour Cream – To Serve
Coriander – To Serve
Method
- Preheat oven to 200 degree. Add oil in a non-stick frying pan and heat over medium heat. Add in onions and stir-fry for 2 minutes or until onions turn soft.
- Add in mince beef and stir with wooden spoon/spatula for 5 minutes or until it turns brown.
- Add in drained and rinsed kidney beans, followed by chilli powder, taco seasoning mix, tomato paste and ¼ cup water. Turn heat down to medium-low and simmer for another 5 minutes or until mixture thickens. Add coriander into the mixture.
- Spread out corn chips on a heatproof plate and top with the beef mixture. Sprinkle some cheese and bake for 15 minutes. Serve with salsa, avocado, sour cream and coriander.
