Ingredients
1 cup Grated White Melon (Bottle Gourd)
⅓ cup White Radish
1½ tbsp Chopped Garlic
½ cup Bread Crumbs
1 tbsp Lime Juice
2 tbsp Chopped Onion
2½ tbsp Chickpea Flour
½ tbsp Black Pepper and Salt
Italian Mixed Herbs (mix of oregano, parsley, thyme and basil)
6 Bread Slices
CURD SPREAD
½ cup Greek Yogurt
1 tbsp Tomato Ketchup
½ tbsp Paprika
2 tbsp Fresh Basil
Salt to taste
Method
- Grate the bottle gourd and radish and strain the water before adding into a mixing bowl with chopped onions.
- Include lemon juice, chickpea flour, garlic and black pepper into the mixture and mix them evenly.
- Mould the mixture into patties and coat them with breadcrumbs.
- Heat oil in a pan to cook the patties. Flip the patties once it has turned golden.
- Flatten the patties when both side has turned golden color and cook for another minute.
- Toast bread in a toaster
- Mix all ingredients of the curd spread together
- Place the patties and spread on the toasted bread.
- Slice in triangles and serve!
