Lauki Toasted Sandwich

Ingredients

1 cup Grated White Melon (Bottle Gourd)
⅓ cup White Radish
1½ tbsp Chopped Garlic
½ cup Bread Crumbs
1 tbsp Lime Juice
2 tbsp Chopped Onion
2½ tbsp Chickpea Flour
½ tbsp Black Pepper and Salt
Italian Mixed Herbs (mix of oregano, parsley, thyme and basil)
6 Bread Slices

CURD SPREAD
½ cup Greek Yogurt
1 tbsp Tomato Ketchup
½ tbsp Paprika
2 tbsp Fresh Basil
Salt to taste

Method
  1. Grate the bottle gourd and radish and strain the water before adding into a mixing bowl with chopped onions.
  2. Include lemon juice, chickpea flour, garlic and black pepper into the mixture and mix them evenly.
  3. Mould the mixture into patties and coat them with breadcrumbs.
  4. Heat oil in a pan to cook the patties. Flip the patties once it has turned golden.
  5. Flatten the patties when both side has turned golden color and cook for another minute.
  6. Toast bread in a toaster
  7. Mix all ingredients of the curd spread together
  8. Place the patties and spread on the toasted bread.
  9. Slice in triangles and serve!
