Ingredients
400g King Oyster Mushroom
1 tbsp light soy sauce
2 cloves Garlic
2 stalks Spring Onion
Red Chilli Padi
1⁄2 tsp Vinegar
1⁄2 tsp Sesame Oil
Salt (to taste)
Sugar (to taste)

Method
- In a bowl, combine rice vinegar, sugar, sesame oil and light soy sauce. Mix well and set aside.
- Finely chop the scallions, garlic and red chilli padi. Set aside.
- After thoroughly washing, hand shred the king oyster mushrooms into thin strips.
- Bring a pot of water to a boil, add salt and place the king oyster mushrooms into the boiling water. Cook for 3-5 minutes. Remove them from the water.
- Place the cooked king oyster mushrooms in cold water to cool them down. Squeeze out the excess moisture from the mushrooms and transfer them to a bowl.
- Pour the prepared sauce mix into the bowl over the king oyster mushrooms.
- Sprinkle chopped scallions, minced garlic and red chilli padi pieces over the mushrooms.
- In a separate pan, heat an adequate amount of cooking oil over medium-high heat.
- Finally, pour the hot oil over the scallions and minced garlic to release their aroma. Mix well just before serving.
