Shredded Mushroom Cold Dish

Ingredients

400g King Oyster Mushroom
1 tbsp light soy sauce
2 cloves Garlic
2 stalks Spring Onion
Red Chilli Padi
1⁄2 tsp Vinegar
1⁄2 tsp Sesame Oil
Salt (to taste)
Sugar (to taste)
Cooking Oil


Method
  1. In a bowl, combine rice vinegar, sugar, sesame oil and light soy sauce. Mix well and set aside.
  2. Finely chop the scallions, garlic and red chilli padi. Set aside.
  3. After thoroughly washing, hand shred the king oyster mushrooms into thin strips.
  4. Bring a pot of water to a boil, add salt and place the king oyster mushrooms into the boiling water. Cook for 3-5 minutes. Remove them from the water.
  5. Place the cooked king oyster mushrooms in cold water to cool them down. Squeeze out the excess moisture from the mushrooms and transfer them to a bowl.
  6. Pour the prepared sauce mix into the bowl over the king oyster mushrooms.
  7. Sprinkle chopped scallions, minced garlic and red chilli padi pieces over the mushrooms.
  8. In a separate pan, heat an adequate amount of cooking oil over medium-high heat.
  9. Finally, pour the hot oil over the scallions and minced garlic to release their aroma. Mix well just before serving.
