Ingredients
Breaded Smoked Salmon Bomb
200g Smoked salmon
100g Cream cheese
1 tsp of Dill
1 tbsp of Lemon juice
1 tsp of Sugar
1 tbsp Whipped Cream(Just to dilute the mixture to able to blend)
flour, eggs, bread crumbs
Smoked Salmon Blinis
1/3 cup Cream Cheese
1/3 cup Sour cheese
1/8 tsp salt
1/8 tsp freshly ground black pepper
24 pieces smoked salmon (1-inch)
1 box pancake mix
1 stalk of spring onion, julienned
1 tbsp of lemon juice and lemon zest.
Smoked Salmon Sour Cream Cucumber Bites
1/3 cup Cream Cheese
1/3 cup Sour cheese
1/3 cup Mayonnaise
1 cucumber, sliced
1 tsp of Dill
Pinch of salt to taste
Caviar for garnish
A dash of lemon juice
Method
Breaded Smoked Salmon Bomb
- Blend all the ingredients until fully mixed.
- Salt is optional; if the smoked salmon is not salty enough then can add a little bit
- Roll the mixture into a ball shape and freeze it to let the shape stabilize and firm up.
- Next, coat it with flour, egg and breadcrumb then fried it until golden brown
Smoked Salmon Blinis
- Combine the sour cream, cream cheese, sugar , salt, lemon juice and zest in a small bowl until blended and set asideĀ
- Heat griddle or large nonstick skillet over medium-high heat
- Grease with vegetable oil or butter.
- In a large bowl, stir the pancake mix, milk and egg with whisk or fork until smooth.
- Drop batter in tablespoons onto the hot greased skillet.
- Cook 1 to 2 minutes until bubbles begin to form on the surface and edges are dry.
- Turn; cook about 1 minute more or until golden brown.
- Transfer to plate.
- Repeat with remaining batter.
- Top each pancake with a dollop of creme fraiche, a small, thin slice of smoked salmon
- Garnish with julienned spring onion if desired.
Smoked Salmon Sour Cream Cucumber Bites
- Combine the sour cream, cream cheese, sugar , salt, lemon juice in a small bowl until blended.
- Top each cucumber with a dollop of the mixture, thin slice of smoked salmon shaped like roseĀ
- Garnish with additional fresh dill and caviar if desired.
