Ingredients

Breaded Smoked Salmon Bomb

200g Smoked salmon
100g Cream cheese
1 tsp of Dill
1 tbsp of Lemon juice
1 tsp of Sugar
1 tbsp Whipped Cream(Just to dilute the mixture to able to blend)
flour, eggs, bread crumbs

Smoked Salmon Blinis

1/3 cup Cream Cheese
1/3 cup Sour cheese
1/8 tsp salt
1/8 tsp freshly ground black pepper
24 pieces smoked salmon (1-inch)
1 box pancake mix
1 stalk of spring onion, julienned
1 tbsp of lemon juice and lemon zest.

Smoked Salmon Sour Cream Cucumber Bites

1/3 cup Cream Cheese
1/3 cup Sour cheese
1/3 cup Mayonnaise
1 cucumber, sliced
1 tsp of Dill
Pinch of salt to taste
Caviar for garnish
A dash of lemon juice


Method

Breaded Smoked Salmon Bomb

  1. Blend all the ingredients until fully mixed.
  2. Salt is optional; if the smoked salmon is not salty enough then can add a little bit
  3. Roll the mixture into a ball shape and freeze it to let the shape stabilize and firm up.
  4. Next, coat it with flour, egg and breadcrumb then fried it until golden brown

Smoked Salmon Blinis

  1. Combine the sour cream, cream cheese, sugar , salt, lemon juice and zest in a small bowl until blended and set asideĀ 
  2. Heat griddle or large nonstick skillet over medium-high heat
  3. Grease with vegetable oil or butter.
  4. In a large bowl, stir the pancake mix, milk and egg with whisk or fork until smooth.
  5. Drop batter in tablespoons onto the hot greased skillet.
  6. Cook 1 to 2 minutes until bubbles begin to form on the surface and edges are dry.
  7. Turn; cook about 1 minute more or until golden brown.
  8. Transfer to plate.
  9. Repeat with remaining batter.
  10. Top each pancake with a dollop of creme fraiche, a small, thin slice of smoked salmon
  11. Garnish with julienned spring onion if desired.

Smoked Salmon Sour Cream Cucumber Bites

  1. Combine the sour cream, cream cheese, sugar , salt, lemon juice in a small bowl until blended.
  2. Top each cucumber with a dollop of the mixture, thin slice of smoked salmon shaped like roseĀ 
  3. Garnish with additional fresh dill and caviar if desired.
